Muryati bergabung di stan Kelurahan Kadipiro. Dia cukup berpengalaman dalam dunia kuliner jenang. “Sayab sudah 15 tahun jualan jenang. Saya buka toko di rumah, lokasinya belakang Unisri (Universitas Slamet Riyadi),” kata dia.

“Memang jenang termasuk jenis makanan kuno, makanya harus tetap dilestarikan. Acara-acara seperti tujuh bulanan atau jelang persalinan, memakai jenang kan maksudnya biar tetap lestari,” ujarnya.

Proses membuat jenang cukup mudah namun membutuhkan kesabaran dan ketelitian. Langkah pertama yaitu mencampur jenang tepung beras dengan sedikit garam dan santan cair secara merata. Campuran itu kemudian direbus di air mendidih, diaduk terus hingga mengental dan airnya meresap. Jenang sumsum disajikan bersama gula jawa cair dan santan. Bisa juga ditambahkan potongan pisang atau buah nangka.

Beberapa jenis jenang yang disajikan di sejumlah stan tersebut seperti jenang abang dan jenang putih, jenang ketan hitam, jenang sumsum, jenang grundul. Setiap jenang memiliki arti dan makna tersendiri. Jenang abang dan putih yang disajikan dalam satu tempat, dapat diartikan sebagai lambang yang melengkapi satu sama lain, laki-laki dan perempuan, kesejahteraan dan kebahagiaan.

Demikian juga jenang sumsum yang berwarna putih bersih, diartikan sebagai kebersihan hati. Rasa jenang yang manis, sebagai simbol kesejahteraan karena gula merupakan bahan pangan yang hampir dipakai di semua masakan Jawa dan harganya tidak murah. Tekstur yang lengket dapat diartikan persatuan dan kesatuan. Makna atau arti setiap masakan jenang yang bermacam-macam, menandakan adanya keharmonisan dalam keberagaman.

Stan yang sangat ramai diminati pengunjung festival yaitu stan Paguyuban Pedagang Pasar Gede. Di lokasi itu, ada satu jenis jenang yang tak banyak disajikan di tempat lain yaitu jenang sagu. Menurut ketua paguyuban, Jumadi, jenang sagu memiliki arti persaudaraan. “Sagu itu sak paguyuban, artinya satu paguyuban,” kata Jumadi kepada Espos di lokasi. Maksudnya, jenang yang menggambarkan sifat baik seperti guyub rukun, persatuan sesama pedagang.

“Prosesnya, sagu dimasukkan ke air yang mendidih, kemudian diaduk. Ditambahkan gula jawa, pandan, santan, sampai airnya meresap,” tutur Harni, salah satu penjaga stan dan juga salah satu juru masak di acara tersebut. Tampilan jenang sagu yang berwarna kecokelatan ini terlihat kasar dan keras. Namun setelah masuk ke mulut, rupanya jenang ini memiliki tekstur yang lembut, gurih dan manis. Dengan menampilkan jenang sagu sebagai menu saat acara-acara paguyuban, mengingatkan diri akan identitas sosial budaya serta menambah rasa persaudaraan seibu, yaitu dari rahim budaya Jawa.
